1 Relationship between Kindergarten Children on the food name familiarity and Dietary Behavior of Mother Keiko Adachi and Reiko Nakayama We conducted the questionnaire survey on the mothers' interest in eating and examined a possible relationship between the mothers' interest and the results of their children's the food name familiarity test. The survey was carried out on 68 and 71 mothers of five- and four-year-olds, respectively, in November, The questionnaire contains 19 questions about their interest in eating and 20 about their training in eating at home. The subjects of the survey were the mothers of the children belonging to a private kindergarten, where the food name familiarity test was performed using 20 kinds of food (whole and cut foods). The mean percentage scores of correct answers among the five-year-old children were 77.0% and 70.5% for the wholes and the cuts, respectively, and among the four-year-old children 68.0% and 60.5% for the whiles and the cuts, respectively. There was a significant relation between the number of mothers who buy food after checking its label for produced area and the percentage of a correct answer, both for wholes and cuts, among the four-yearold children(p=0.049,p<0.0001). And there was also a significant relation between the number of mothers who teach their children to chew well during meal and the percentage of a correct answer, both for wholes and cuts, among the five-year-old children(p=0.0021,p=0.007). It was suggested that the kindergarteners can learn the names of food quickly and easily through their rich exposure to food at home when their mothers have much interest in eating.

5 一25一 平 成22年12月(2010年) 図1 母親 の食 事 作 りの意 識 の 方 が 多 い 傾 向 が 見 られ た よ く噛 ん で 食 べ る よ う注 意 す る は 約50%の 母 親 が よ くす る と回 を抽 出 した(表3) 母 親 の 食事 作 りと食生 活 にお け る 意識 の19項 答 した 一 方, 家 庭 菜 園 で 野 菜 の 栽 培 を子 ど も と 一 緒 に す る と い う項 目で は 約10%の 母 親 が よ た 第1因 子 に は, 旬 の 食材 を料理 に取 り入 れ る くす る と 回答 した が,70%の い ろ い ろ な 種 類 の 野菜 を 料理 に使 って い る な ど 母親 は ほ とん ど し 目の う ち,因 子 の負 荷 量 がO.40以 上 の 項 目を抽 出 し な い,し な い と 回答 した ま た, 子 ど も と一 緒 の6項 に盛 り付 けや 後 片付 け をす る, 子 ど も と一緒 に調 調 理 をす る こ とに前 向 きで あ る と考 え られ る項 目が 目で,い ずれ も料 理 を楽 しみ,健 康 を考 えて 理 をす る, 子 ど も と一 緒 に調 理 の 下 準 備 をす る 高 い 負 荷 量 を示 して い る と思 わ れ る 第2因 子 は, で, よ くす る と回 答 した 母 親 は 約5%で あ り, 食事 の時 楽 しい 会話 を心 が けて い る 食事 前 後 の 40%の 母 親 は ほ とん ど しな い,し ない と回答 し 挨拶 を してい る な どの5項 目で,食 事 マ ナ ーの 手 た 本 を子 ど も に示 して い る 項 目で あ る と考 え られ る 5.母 親 の意 識 の 因 子分 析 お よ び食 べ 物 の 名 前認 知 度 の正 解 数 との 関連 園児 の 年齢 別 に 母 親 の 食事 作 り と食 生 活 に お け 第3因 子 は, 食 品 の 産 地 を 見 て購 入 してい る な どの3項 目で,食 品の 選 択 に気 を配 っ てい る項 目が 表 され て い る と思 わ れ る 因子 分 析 で得 られ た 母 る 意識 (19項 目)に つ い て,主 因 子 法,プ ロマ ッ 親 の 食 事 作 り と食生 活 にお け る意 識 のCronbach ク ス回 転 に よ り因子 分析 を行 い,そ れ ぞれ に3因 子 α係 数 は,そ れ ぞ れ0.807,0.673,0.613で あったこ
