Cooking skills for students in home economics education Miho KAWAMURA Keywords: cooking skill. home economics education. daily life T here have been a lot of cooking classes in Japanese home economics. Recently cooking classes focus on not acquiring cooking skills. but increasing self-esteem. This paper aims to review the main studies about home economics and examine what role cooking skills play in Japanese home economics. The results are as fo llow: 1) The aims of home economics education are to promote students to be independent and to be creative in daily life. 2) Students do not gain an overall picture of food and daily life. This is because home economics education is rigidly categorized into specialized academic fields. 3) There have been no home economics studies about promoting students to be independent in daily food life. 4) Training in cooking skills in home economics is not taught as a part of a daily life. T herefore students in home economics should acquire cooking skills to use in their whole daily lives. - 126 -
