Dear Members, Warm greetings from Roppongi Hills Club. In March and April, exciting events such as our first Easter Family Buffet and for promotion are in place for the entire family to enjoy. We will also be introducing our new seasonal dishes throughout our restaurants from our Chefs. Chef Nakajima of la cucina will be hosting his first ever Chef s Table on March 11 creating a unique menu featuring fresh pasta, which will be a night of dining to remember. We will also be launching our new online member experience survey in the coming weeks, which will allow us the opportunity to obtain more valued feedback from all of our members, which will no doubt assist us in being able to deliver more rewarding club services and experiences. 05 Enjoy authentic Italian f lavors with a variety of fresh pastas Chef Nakajima is dedicated to prepare special pasta paired with seasonal ingredients Pasta is the most familiar Italian dish in Japan. In my travels around Tuscany, I was captivated by the varieties of fresh pastas that I encountered. The sensation of tasting and experiencing their springy consistency creates a unique flavor that is completely different from dried pasta. At la cucina, five types of fresh pasta are always offered, two of them are daily specials. The quality of fresh pasta is delivered by smooth, well-worked dough. Vigor and patience are a must when kneading the dough as well as being sensitive to humidity and carefully adjusting the amounts of water used. I hope you enjoy la cucina s pasta dishes, which are made to order according to your preferences. Shinsuke Nakajima Sous chef, la cucina, A native of Toyama Prefecture, Chef Nakajima began his career at a trattoria in Osaka. Traveling to Tuscany in Italy, he gained experience in restaurants and wineries. Upon returning to Japan, he worked under Chef Tsutomu Ochiai for seven years. He joined Roppongi Hills Club in 2012 and was promoted to his current position in 201. Traditional tagliolini, broad pappardelle and short trofie pastas.
