His lasagne is made with beef meatballs, salami, boiled eggs, mozzarella and tomato sauce in the tradition of his Naples birthplace. Applying skills honed at Michelin-starred establishments in Italy to local products, Alfonso creates seasonal Italian-centric menus that can only be enjoyed at K shiki. T he small, silver-skinned kohada gizzard shad is considered to be the ultimate test of a sushi chef s skills. First, the filleted fish is lightly salted and set aside, constantly monitored for optimum condition. After the salt is rinsed away, the fillet is washed in vinegar, then marinated for a concentrated flavour. At Sushi SORA, kohada is marinated in sake lees.
