4 NIGORI Dassai 50 Nigori (Yamaguchi Prefecture) Fruity, light, buoyant, bouncy, and soft, this unfiltered sake drinks like it is floating. It is soft, airy, and feels like it swooshes through the palate. Glass Carafe Hakkaisan Sparkling Nigori A new approach to a champagne-like sake. It has a sparkling fruity flavor with a light texture. This sake is nice and tight, with a crisp finish. (360ml) YAMAHAI DRY Carafe Tengumai Yamahaishikomi Junmai Shu (Ishikawa Prefecture) It has a full nutty and earthy nose with a slightly sharp aroma. Sake is brewed; shochu is distilled Sake is best produced in cooler climates whereas Shochu in warmer climates Alcohol percentage / Sake: 15% - 17% vs. Shochu: 15%- 46% Shochu is made with a variety of raw materials such as barely, rice, sweet potato, etc. Different Koji (malt) / Sake uses only yellow Koji: Shochu uses black, white, and yellow Koji Sake is more comparable to wine: Shochu bears the likenesses to vodka and whisky

5 SHOCHU BARLEY SHOCHU Iichiko Kurobin (Black ) (Oita Prefecture) A nice peppery snappy shochu made with all-koji raw spirits. Earthy aromas and flavors of wet bamboo and fermenting apple and pear with light-to-medium body. Glass Iki Shochu Taiso (Nagasaki Prefecture) A unique, complex flavor worth savoring. It s traditional taste comes from filtration using bamboo charcoal and high quality natural spring water from IKI island. Glass Kan no Ko This shochu is aged in oak barrels for three years before release. It has a golden color and a great depths of barley flavor that comes alive on the palate. Glass RICE SHOCHU Glass Kawabe (Kumamoto Prefecture) Created by unfiltered process that leaves the shochu with a rich nose. The first sip comes with a delicious buttered banana flavor then the sweet middle is followed by the clean, crisp, dry finish.

6 SWEET POTATO SHOCHU Tenshi no Yuwaku This special Shochu is fermented in sherry casks for about 10 years. It is potato Shochu, but the rich aroma and taste are very close to Brandy. Glass Sato From a boutique distiller specializing in using sweet potatoes, this premium Shochu with strong sweet potato aroma, compliments meat-based dishes. Glass Kiroku (Miyazaki Prefecture) Made from sweet potatoes Kogane Sengan" and fermentation with Black Koji which give this sake a fragrant aroma & mellow taste. Dry with mild sweetness. Glass Hakuten Houzan Sweet and rich fragrance of sweet potato that has sharpness of a spicy taste. This is the masterpiece which imparts a rich experience. Glass Kura no Shikon Kura no Shikon, literally means Distillery Master s Spirit, was aged 3 years in a ceramic pots, adding complexity and depth. Glass Manzen This is a gem. RED WINE Opus One (U.S.A., California) Aromas of rose petals, cassis and black cherry combine with notes of marzipan and sandalwood.
