When Shuichi Kato, 51, took over the store as president in 1990, he traveled throughout Japan to visit regions where zabuton are produced, motivated by a wish to take on a bold, new challenge. To offer the joy of choice, the store catalog contains 120 different colors and patterns of zabuton. When it comes to custom orders, countless combinations of colors and patterns are possible. Not only the colors are unique. The ko-zabuton (small zabuton), the store s main product, are uniquely 45 centimeters long and 42 centimeters wide, and just the right size to use on a sofa or chair. 3 Culture National Museum of Nature and Science, Tokyo Restores an Ancient Boat to Re-enact the Overseas Voyage of Our Ancestors How did the ancestors of the Japanese people cross the seas from the Asian continent 30,000 years ago? To investigate the route they took, the National Museum of Nature and Science, Tokyo (located in Taito Ward, Tokyo) announced on February 9 that they will be launching an experiment this summer. According to Mr. Yosuke Kaifu, Director of the Human History Research Group at the museum, there are three possible routes by which homo sapiens (early humans), who originated in Africa, came to Japan. One route brought them to northern Kyushu from the Korean peninsula via Tsushima. The second route took them to Taiwan, which was connected to the Asian continent at the time, and from there they traveled to the Ryukyu Islands (present-day Okinawa), and then north. The third route brought them to Hokkaido via Sakhalin when the two were connected by land, and from there they traveled south. The journey to the Ryukyu Islands, in particular, is thought to have been the most difficult because of the strong flow of the tide. A team of 26 anthropology and archaeology specialists and explorers will be participating in the experiment. They will sail from Yonaguni-jima to Iriomote-jima in Okinawa (approx. 75 kilometers) this July, and will sail from Taiwan to Yonaguni-jima (more than 200 kilometers) next July. They plan to re-create an ancient boat by weaving plants that grow wild in Yonaguni and re-enact the ancient sea voyage accompanied by an escort boat. At the Hashimoto Yakichi Store in Kazo, the production of koinobori has begun for this year s Children s Day Festival in May. Its takes a skilled artisan one to three months to complete a single carp streamer, as everything is done by hand, from cutting the fabric and applying designs using colored pigments to attaching a wire ring to the mouth so that it can catch the wind. 4 Information on Technical Intern Training ぎのう技能 じっ しゅうじょう ほう 実習情報 Technical Intern Trainees Will Also Receive an Individual Number まいなんばーマイナンバーはぎのうじっしゅうせいつうち技能実習生にも通知されます What is an Individual Number? An Individual Number is a 12-digit number that is issued to everyone who has a registered residence in Japan. Everyone is issued a different number. Technical intern trainees will also be issued an Individual Number. A while after coming to Japan, a paper card notifying you of your Individual Number (notification card) will be sent to your dorm or place of residence in Japan by post. Please be sure you receive this, and be careful that you do not accidentally throw it away after receiving it. What is the Individual Number used for? Your Individual Number will be used to process matters related to social security, taxation, and disaster countermeasures. In your status as technical intern trainees, the implementing organization to which you belong is normally responsible for processing matters related to social security and taxation. To perform these procedures, your implementing organization will require your Individual Number, and will therefore be asking you for your number. Upon understanding how your Individual Number will be used, present your number to your implementing organization as appropriate. How and when you should present your number varies according to the organization, so check with your implementing organization for details. Handle you Individual Number with care. Your Individual Number is important in that it provides information about you. Therefore, you should not let others know your number more than necessary. Your notification card is also important, and should be kept in a safe place, like you do your passport. Even if you feel insecure about keeping your card yourself, do not let your supervising or implementing organization keep it for you. Formalities related to your Individual Number When your address changes, or when you leave Japan to return to your country, you must bring your Individual Number notification card and notify the municipality office governing your place of residence. If you lose your notification card, you can have your card reissued. These formalities may be performed by your supervising or implementing organization on your behalf. Therefore, in cases such as the above, consult with your supervising or implementing organization in advance. 6 Let s Cook and Eat the Tastes of the Season! た食 つくべよう! 作 しゅんろう! 旬 あじ の味 Hayashi Rice はやしらいすハヤシライス [Ingredients (four servings)] 200 g thinly sliced beef 1 onion 4 bowls white rice 40 g butter 2 Tbsp flour 200 ml ketchup 400 ml water 2 Tbsp soy sauce Salt & pepper [Preparation] 1.Lightly salt and pepper the slices of beef and dust them with flour. 2.Cut onion into wedges. 3.Add 20 g of butter to a heated frying pan, then place the slices of beef in the pan. Take the beef out when it is cooked. 4.Add the remaining butter to the frying pan and stir-fry the onion wedges. 5.When the onion wedges are cooked, return the beef slices to the frying pan and stir-fry them together. 6.Add ketchup, water, and soy sauce to the frying pan and mix well. Cover the pan with a lid and simmer on low heat for about 15 minutes. 7.Scoop rice onto a plate and pour a generous portion of the beef sauce over it. Garnish with chopped parsley, green peas, or other such toppings for color and added flavor. (See the page on the right for a photo of the dish.) Japan has four distinct seasons, with each season offering different seasonal ingredients. Spring is particularly felt in vegetables. Even vegetables that are available year-round are given special names in spring, such as spring cabbage, new potatoes, and new onions. Spring cabbage and new potatoes are called that because they are harvested in spring. Onions are normally shipped to stores after drying them for a certain amount of time after harvesting, but those that are shipped immediately after harvesting are called new onions. Here, we introduced a recipe for Hayashi Rice, which uses onions of the season in abundance. Whether it is made using new onions or regular onions, the sweetness and texture of stewed onions in tomato-flavored sauce goes perfectly with rice. There are various theories to the name Hayashi Rice, but it originally comes from the British dish of hashed beef. More than a century ago, hashed beef was introduced to Japan from overseas, and rearranged in Japanese style (such dishes are called yoshoku, which literally means Western dishes ). Authentic Hayashi Rice is made using demi-glace sauce, but the recipe here uses ketchup for convenience. 7 Technical Intern Life What Kind of Meals Do You Eat? In Japan, April marks the beginning of the new fiscal year. So it s a good time for those of you who are beginning a new life, or who have already begun a new life, to think a little about your lifestyle. Do you know the term ishokujyu? It means clothing, food, and housing, and expresses the basics of living. Some people may think, I m picky about fashion, so clothing is most important to me, while others may think, I feel happiest when I m spending time in my room, which I ve decorated to be as comfortable as possible for myself. Among the three basics of living, which of them is most important varies from person to person. However, no one should make light of food, because meals help your body to develop, and well-balanced meals protect your health. Consuming too much fat and salt could lead to disease, so you should take care to eat a lot of vegetables. That said, eating unbalanced meals, such as eating only raw vegetables, is not good for you either. Instead of always eating tasteless meals or dishes you do not necessarily like, go ahead and eat whatever you like to your heart s desire, even if it may be oily or spicy. Delicious meals that you enjoy eating will boost your spirits and give you energy, above all else. By the way, what have you eaten today?
