SAKE in the World / 日本国外で作られる清酒 From before WWI, Japanese people started to produce Sake in overseas countries, such as Hawaii, Brazil, Korea and etc. From then, after many long and winding histories of over 100 years, Saké, Sake or Saquê is now coming to be a global beverage. Sake is now produced at least in 9 foreign countries in the world. Sake export from Japan in 2009 was, because of world serious economy recession, a bit shrunk compa to 2008, but still on a growing trend. Sake consumption in the world is increasing along with global Japanese food booming. Shochu (especially traditional style, Honkaku Shochu ) and Umeshu are also growing and coming to be world class beverages. Here, we tried to make Catalogue raisonné, or complete list of Saké, Shochu and Umeshu manufacturers in the world outside of Japan. On following pages, we also include some impressive packages of leading Sake exporters from Japan. These bottles will be exhibited at our booth of FOODEX 2010 / Makuhari Messe. In past, many Sake manufacturers, especially Ji-zake (i.e. local brands), were using their domestic-use front label. However, nowadays, many manufacturers are using export-use front label, which has usually similar motif but with some English or shipping destination language. Besides, some are using specially designed label, typically exotic ones, like Geisha, Fujiyama, Torii, etc. Kanji calligraphy may be both exotic for foreigners and traditional for Japanese. The back label is getting more important role, as foreign customers have studied more about Sake. They want to know not only the brand name but also detail about the Sake. The back label may have more room to design. Regarding with the closure, screw caps (roll on pilfer proof caps) are typical, but a combination of Kanto aluminum capsule and Kaesen plunger is increasing at medium/small lume Sake bottles. They have been originally used as a closure for traditional 1.8 liter Sake bottle, but regarded as traditional Sake closures, good to appeal premium value and to distinguish from screw capped ones, which are sometime regarded as cheaper ones. This is like cork vs. screw cap in wine market. In some case, only Kaesen plunger (like T-top of whiskey) is used instead of screw cap. The traditional 1.8 liter (=1 Sho, Japanese traditional lumetric unit) Sake bottle seems a bit too big to handle, but it is an image-maker of Sake, like Bordeaux shapes bottle in wine. In export market, 1.8 liter bottle has still important role at Japanese restaurant and for Japanese atmosphere. For medium sized bottle, in past, 750 (or 700 ml for sprits) ware requested in some countries as a regulation. However, Japanese standard 720ml (=4 Go, again, traditional lumetric unit) bottles seem to be allowed in many areas and increasing at this moment.
