10 主たる伝来作物としてソルガムを指すギニによっても説明することができるこれらのアコーンギニアカボチャハイビスカスを事例はそれらを栽培するにいたるのにアフ指すギニアカタバミギニアツツジギニリカ人の主導性が重要な意味をもったことをアコショウギニアグラスギニアキビ明確に示しているこの事例として nname ギニアニワトリホロホロチョウなどがあの名をもつヤムイモ oko ないし英語のるポルトガル人やスペイン人がヨーロッパ gumbo がこれに由来する quigombo の名をの海外領土を拡大し始めたのでイベリア地もつオクラ guandú の名をもつキマメ方の言語の例はもっと豊富にあるたとえ benne の名をもつゴマ bissy の名をもつばアフリカ起源の語バナナはキューバ東コーラナッツ eddo の名をもつタロイモ部コロンビアエルサルバドルの旧プラン dênde の名をもつパームオイルがある15 旧テーション地域ではギネオス guineos と呼ば大陸熱帯地方のこれらの植物は熱帯アメリカ 14 れている Fig. 7 そのような地理的記述に入植したプランテーション所有者には目新語は歴史的に大西洋の奴隷貿易の時代の中しいものであり奴隷たちが栽培していた食にアフリカからの伝来作物を位置づけるそれ料用菜園で発見されたものであったそれららの作物についての社会的記憶を表していもまたヨーロッパ人が奴隷が持ち込んだと主る張した作物であるアフリカ人が持ち込んだ新大陸のプランネーション経済にアフリカこれらの作物は奴隷の料理人が調理した食大陸の主要食料を定着させるのにアフリカ人事を通じて白人のプランテーション所有者奴隷が果たした非常に重要な役割はそれらの食料品一覧に静かに浸透していったアフのアフリカでの名前が新大陸の植民地の言語リカの食料がプランテーション表に載ることに名をとどめている食用作物を検証することになったとき奴隷所有者は奴隷たちがそれらに対して用いている名前を単に借用したこのようにしてアフリカでの名前が新大陸の植民地の言葉へと推移していったのである今日わたしたちはこれらの伝来作物をアフリカからの離散集団の料理の成分要素群をはっきりさせるものと考えているしかし大西洋を横断する奴隷貿易の時代にはこれらの作物は奴隷たちが集団で生き延びるのに貢献した栄養上不可欠の補給物資を供給したのである Ⅳ 結論アフリカ大陸の食用作物の遺産は新大陸の熱帯地方にプランテーションの奴隷制の初期時代に到着したこれらの作物群は生存の糧自給を確立しそれらを新たな環境に適応させるために奴隷たちが払った努力によって日常食の主要作物として広がっていくこ Fig. 7 とになったアフリカから持ち込まれた作物 110
