1 産卵後期鶏における籾米配合飼料給与がハウユニット値に及ぼす影響 佐藤真理子 佐藤智之 石川敬之 笹木教隆 要約ビタミンE(V.E) やポリフェノールなどの抗酸化成分を豊富に含む籾米を産卵後期鶏に給与することによるハウユニット (HU) 向上の可能性について検討した 試験 Ⅰ:168 羽のジュリアライトを供試し 対照区 ( 市販飼料 ) 試験区 1( 市販飼料 +V.E) 試験区 2( 籾米 20% +V.E) 試験区 3( 籾米 30%+V.E) 試験区 4( 籾米 20%+ 米糠 8%+V.E) 試験区 5( 籾米 30%+ 米糠 10%+V.E) の6 区に区分した 試験 Ⅱ:88 羽のジュリアライトを供試し 試験区 1( 試験 Ⅰと同飼料 ) 試験区 6( 米糠 10%+V.E) 試験区 7( 米糠 20%+V.E) の3 区に区分した 保存卵の HU 調査は 30 下 日後および4 下 週間後に実施し 産卵率 飼料摂取量 体重測定を実施した 産卵率は試験区 2~5で低下し 飼料摂取量 85 週齢体重は 試験区 3~5で低下した (P<0.05) 30 下 3 日保存後の HU は試験区 4 5で高く 試験区 5では6 日 9 日保存後も高かった (P<0.05) 4 下 6 週間保存後の HU は試験区 4 5で高く 試験区 5では8 週間後も高かった (P<0.05) 試験区 6 7では産卵率 保存後の HU ともに対照区と差はみられなかった 以上より 保存鶏卵の HU は V.E 濃度が一定のもとで籾米 米糠の配合割合が増すほど高く維持されたことから 米糠に含まれる V.E 以外の成分により HU の低下が抑制されたものと推察された キーワード : 採卵鶏 籾米 米糠 ハウユニット 緒言消費者には 卵白が盛り上がった新鮮な卵が好まれるものの 産卵後期の鶏が生産する卵は鮮度の指標とされる HU が低く 経時的な低下速度も速くなることが知られている (Pasquoal ら,2012) これまでに 暑熱期の HU 低下防止に V.E を飼料中に 60IU /kg 添加することが有効であったと報告されている (Kirunda ら 2001) また 採卵鶏に給与することで保存に伴う HU の減少を抑制する効果が認められた原料としては 茶殻サイレージ ( 松馬ら,2004) 柿の葉 (Oh,S. T. ら,2013) 褐藻類粉末 ( 近藤ら,1982) 木酢液 ( 山内ら,2013) カボス搾汁残さ ( 手島ら,2010) などが報告されており 茶殻サイレージ 柿の葉については原料物質中に含まれ 2. 供試鶏および羽数 69~88 週齢の採卵雌系ジュリアライト 168 羽 るポリフェノール等の抗酸化物質によって HU が維持されるのではないかといわれている 籾米の米糠部分には V.E やポリフェノールなどの抗酸化成分が豊富に含まれているため 給与飼料中の籾米の配合率を上げることで HU 値を向上できる可能性があり 産卵後期の鶏は CP 要求量が前 中期に比べ少ないことから 籾米をより高い割合で配合しても生産性への影響が少ないと考えられる そこで 産卵後期の採卵鶏飼料に籾米 米糠を配合したときの HU 生産性に及ぼす影響について検討を行った 材料および方法試験 Ⅰ 1. 試験期間 2014 年 6 月 20 日 ~10 月 31 日 (133 日間 ) ( 各区 7 羽 4 反復 ) 3. 試験区分
2 市販成鶏用配合飼料 ( 市販飼料 )( ゴールド 17; 丸菱商事 ( 株 ) 愛知) を給与した群を対照区とし 市販飼料に V.E(Rovomix;DSM オランダ ) を添加した区 ( 試験区 1) 市販飼料に籾米を 20 30% 配合した区 ( 試験区 2 試験区 3) 市販飼料に籾米を 20 30% 配合し さらに付近の精米所より譲り受けた米糠をそれぞれ 8% 10% 配合した区 ( 試験区 4 試験区 5) を設けた ( 表 1) 試験区 1~5における飼料全体の V.E 濃度は 計算上 60mg /kg となるように調整した 籾米の消化性や暑熱期の飼料摂取量低下を考慮し 30% 配合する場合は挽砕機 ( 麦っ子 ; ケーヨー機械製作所 ( 有 ) 千葉) にて粉砕した状態で配合した 各試験飼料には CP Ca 濃度が対照区と同等となるようにコーングルテンミール (CG)( 五郷製麦所 愛知 ) 炭酸カルシウム ( 近藤石灰工業 ( 株 ), 岐阜 ) を添加し 攪拌機にて均一に混合した後に給与した 各飼料の配合割合は表 1 のとおりである 表 1. 飼料の配合割合および成分値 4. 飼養形態開放鶏舎の 2 段ケージに単飼し 飼料は 1 日 1 回午前中に給与し不断給餌とした 給水は自由飲水とした 朝夕平行点灯により 1 日 16 時間を明時間とした 5. 調査項目および方法 1) 保存後の HU 調査試験飼料給与開始 1~4ヶ月後まで 1ヶ月毎に無作為に 1 日当たり各区 20 卵 (1 区 :5 卵 4 反復 ) の抽出を7 日間にわたって実施し 各産卵日毎に保存条件 日数を設定した 卵の保存は,30 に設定した孵卵器 ( 村井孵卵器製作所 広島 ) または4 に設定したメディカル クーリングユニット ( 三洋電機 ( 株 ) 大阪) にて行った 30 保存卵については 日後に卵質計 ( 富士平工業 ( 株 ) 東京) を用いて測定した卵白高 (H) および卵重 (W) から以下の式により HU を算出した HU = 100 log ( H-1.7W ) 4 保存卵については 週間後同様に実施した また 産卵当日の HU についても産卵日の午後 3 時頃に調査した 2) 卵質検査試験開始から終了まで 2 週間毎に無作為に各 20 卵 (1 区 :5 卵 4 反復 ) を抽出し 翌日に測定を行った 卵殻強度は卵殻強度計 ( 富士平工業 ( 株 ) 東京) 卵殻厚は卵殻厚計 ( 富士平工業 ( 株 ) 東京) 卵黄色はヨークカラーファン (1989 年度版 ロッシュ社 スイス ) を用いて測定した 3) 産卵率 平均卵重 飼料摂取量 飼料要求率体重毎日 反復試験毎の産卵数 産卵重量を測定し 産卵率 平均卵重を算出し 1 週間毎の平均値を算出した 飼料摂取量は 反復試験毎に試験開始から終了まで 1ヶ月毎に残飼料を測定し 給与量から差し引いた値を飼料摂取量とした 飼料要求率は試験期間中の飼料摂取量と生産総卵重より算出した 体重は試験開始時から 1 ヶ月毎に各区 12 羽 (1 区 :3 羽 4 反復 ) ずつ測定した 4) 統計処理対照区と籾米配合 6 区 対照区と玄米配合 2 区それぞれにおいて一元配置の分散分析法を実施し 差のみられた項目については Tukey-Kramer 法による多重比較検定を行った 試験 Ⅱ 試験 Ⅰの結果から 市販飼料に米糠のみを配合することが保存卵の HUに与える影響について検討するために試験 Ⅱを実施した 1. 試験期間 2014 年 11 月 22 日 ~12 月 19 日 (28 日間 ) 2. 供試鶏および羽数 91~95 週齢の採卵雌系ジュリアライト 84 羽を供試し 各群の産卵率 体重が等しくなるよう振り分けた ( 各区 7 羽 4 反復 )
3 3. 試験区分試験区 1には試験 Ⅰと同じ飼料を給与した 試験区 6 7には市販飼料に米糠 V.E CG 炭酸カルシウムを配合した飼料を給与した V. E CG 炭酸カルシウムについては試験 Ⅰと同じ製品を用いた 各飼料の配合割合は表 2のとおりである 表 2. 飼料の配合割合および成分値 表 2.30 保存卵の HU 同列異符号間に有意差あり (P<0.05) 表 3.4 保存卵の HU 4. 飼養形態試験 Ⅰに準じて実施した 5. 調査項目および方法 1) 保存後の HU 調査試験終了時 ( 給与開始から 1 ヶ月後 ) 無作為に1 日当たり各区 20 卵 (1 区 :5 卵 4 反復 ) の抽出を6 日間にわたって実施し 試験 Ⅰと同条件の温度 期間にて保存後 HU を測定した 2) 統計処理試験 Ⅰに準じて実施した 結果試験 Ⅰ 1) 保存卵の HU 調査 30 下保存卵における HU は 試験区 1では対照区と比べ差はみられなかった 試験区 2 3では いずれの保存日数においても対照区および試験区 1より高い傾向にあったものの 差はみられなかった 試験区 4では3 日後まで高い値を示したものの 6 日後以降は対照区と比べ差はみられなかった 試験区 5では当日から 9 日後まですべての段階において高い値であった (P<0.05)( 表 2) 4 下保存卵の HU は 試験区 1では対照区と比べ差はみられなかった 試験区 2 3では いずれの保存日数においても対照区および試験区 1より高い傾向にあったものの 差はみられなかった 試験区 4では6 週間後においてのみ対照区より高い値であった 試験区 5では4 週間後 6 週間後において高い値であった (P<0.05)( 表 3) 同列異符号間に有意差あり (P<0.05) 2) 卵質検査卵黄色は 試験区 5では他区よりもヨークカラーファン値が低下し淡くなった (P<0.05) 産卵翌日の HU は 試験区 4 5が対照区および試験区 1に比べ高い値であった (P<0.05) 卵殻強度 卵殻厚については各試験区で差はみられなかった ( 表 4) 表 4. 卵質検査結果 同列異符号間に有意差あり (P<0.05) 3) 産卵率 平均卵重 飼料摂取量 飼料要求率 体重産卵率は 籾米を配合した試験区 2~5で低下した (P<0.05)( 表 5)
4 平均卵重については各試験区で差はみられなかったものの ( 表 5) 籾米 米糠の配合割合が高いほど生産卵に占める MS 卵の割合が高くなり LL 卵の割合は減少する傾向にあった ( 図 1) 飼料摂取量は試験区 3~5で低下し 85 週齢体重も同様に低下した (P<0.05) 飼料要求率において籾米を配合した試験区 2~5では試験区 1に比べ高い値となったものの (P<0.05) 対照区と比べ差はみられなかった ( 表 5) 表 5. 産卵率 平均卵重 飼料摂取量 飼料要求率 体重図 1. 各試験区における産出卵に占める MS LL 卵の割合 試験 Ⅱ 1) 保存卵の HU 調査いずれの保存温度 期間における HU についても試験区間で差はみられなかった ( 表 7) 表 7. 保存卵の HU 考察卵の濃厚卵白は主にオボムチンという糖蛋白質によって構成されており α βのサブユニットから成ることが明らかになっているものの ( 渡辺,2000) それらの立体構造については不明な点が多く 濃厚卵白の水様化の詳細な機序についても明確にされていない これまでに 濃厚卵白の水様化は保存時間の経過とともに炭酸ガスが放出され卵内部の ph が上昇し オボムチンの性状を変化させることによって進行するとの報告がある ( 坂井ら,1998) 松馬らは 茶ガラサイレージを採卵鶏に給与したときの保存鶏卵において ph の上昇による水酸基の上昇に伴い 茶ガラに含まれるポリフェノールの抗酸化活性が増加した結果 HU の減少が抑制されたと報告している ( 松馬ら,2004) 籾米にはポリフェノール γオリザノール フェルラ酸 フィチン酸など複数の抗酸化物質が含まれており その量は特に米糠中に多い そこで 産卵後期の採卵鶏に籾米 米糠を給与することによる保存卵の HU へ及ぼす影響について検討した 保存卵の HU を調査したところ V.E を対照区の2 倍に増加した試験区 1における保存後の HU は 対照区に比べ差がみられなかったことから V.E 濃度を 60 mg /kg に増加することは保存鶏卵の HU に影響を与えないと考えられた 籾米を高い割合で配合した試験区 2 3では いずれの保存期間においても HU は高い傾向にあったものの 対照区と比べ差はみられなかった しかし 籾米に加え米糠を配合した試験区 4 5における HU は いずれの保存温度においても対照区に比べ高く 籾米 米糠の配合割合が高い試験区 5においてより高い値を示す傾向がみられ 30 下 6 日 9 日保存後において HU 値 60 以上を維持していたのは試験区 5のみであった 試験 Ⅱにおいて 米糠のみを市販飼料に配合しても HU に影響はみられなかったことから 米糠単独による効果は少ないと推察される 以上のことから 籾米に含まれる V.E 以外の成分により HU の低下が抑制されたものと推察された 高い HU を維持する卵を生産するためには籾米の配合を 30% 程度配合することが重

6 Effects of feeding unhulled rice and rice bran to laying hens in the late stage of lay period on haugh unit Mariko SATO, Tomoyuki SATO, Takayuki ISIKAWA, Kiyotaka SASAKI Fukui Prefectural Livestock Experiment Station Abstract The aim of this study was to investigate the effects of feeding diets with a high rate of unhulled rice and rice bran to laying hens in the late stage on decreasing haugh unit (HU) during egg storage period. Experiment 1 : One hundred and sixty eight Julialite were assigned to 6 groups as follows, control (commercial raying hen diet), group 1 (commercial diets+v.e), group2 (20% unhulled rice+v.e), group3 (30% unhulled rice+v.e), group4 (20% unhulled rice+8%rice bran+v.e), group5 (30% unhulled rice+10%rice bran+v.e).experiment2: eighty eight Julialite were assigned to 3 groups as follows, group1(commercial diets+v.e), group6 (10%rice bran+v.e), group 7 (20%rice bran+v.e). Egg samples were determined the HU every month after strage in 30 degrees for 3,6,9 days or 4 degrees for 4,6,8 weeks. Egg-laying rates in group 2-5 were significantly lower than those in control (P<0.05). Dietary intakes and 85 weeks weights in group 3-5 were lower than those in control (P<0.05). The HU in eggs stored in 30 degrees for 3 days in group 4 or5 were higher than those in other groups, and those stored for 6 or 9 days in group5 were also higher. Then, those stored in 4 degrees for 6 weeks in group 4or5 were higher than others, and those stored for 8 weeks in group5 were also higher(p<0.05). In group 6 and 7, there were not significant difference in egg-laying rates and HU of storage eggs compared to control. As a result, under equal V.E concentrations, reduction rates of HU during egg storage period decrease as the levels of unhulled rice and rice bran in diets increase. Therefore, the results suggest that ingredients except vitamin E included in unhulled rice effect slowness in decrease of HU during egg storage.
