2 Piemonte Questo mese il vino ha il profumo del Piemonte. Il vino viene prodotto in Piemonte sin dall antichità e sono tantissime le sue produzioni conosciute e apprezzate a livello globale. Le varie aree di produzione hanno in comune il metodo di coltivazione dei vitigni, che avviene quasi esclusivamente in collina e che produce un uva adeguata sia a vini rossi riservati all invecchiamento, sia a profumati vini bianchi. Non possiamo parlare di vini piemontesi senza menzionare il Nebbiolo, per tanti il più distinto dei vitigni Italiani, la Barbera d Alba, il Dolcetto, il Barbaresco, le Langhe e il Barolo che, insieme al Monferrato e il Roero, sono entrati nella lista del Patrimonio dell Umanità dell Unesco. Salute! GAVI DEL COMUNE DI GAVI MINAIA NICOLA BERGAGLIO ZONA DI PRODUZIONE Rovereto (Alessandria) UVE Cortese in purezza ANNO 2015 MATURAZIONE 6 mesi in tini d acciaio e 4 mesi sulle proprie fecce. CARATTERISTICHE ORGANOLETTICHE Dal colore giallo paglierino intenso, al naso propone fiori d acacia e magnolia, mela renetta, mandorla dolce, agrumi maturi ed un elegante mineralità. In bocca è sapido, strutturato e morbido. GRADAZIONE 13 ABBINAMENTO Fantastico con i crostacei e perfetto con il vitello tonnato.

3 Liguria Questo mese il vino ha il profumo della Liguria. La Liguria vanta un ottima tradizione vitivinicola che risale all epoca romana, ma fu solo durante il Medioevo che ci fu un considerevole aumento delle aree coltivate a vite. Nonostante sia esposta al mare e formata quasi esclusivamente da monti e colline, la Liguria conta ben 8 diverse zone DOC riconosciute, concentrate principalmente intorno a La Spezia, Cinque Terre, Sestri Levante e buona parte della riviera di Ponente. BARBERA D ASTI DOCG VILLA M ZONA DI PRODUZIONE La Morra (Cuneo) Diversi vini DOC liguri sono apprezzati e conosciuti in tutto il mondo, come ad esempio il rosso Riviera Ligure di Ponente Rossese o i bianchi Colli di Luni Vermentino e Golfo del Tigullio, un vino leggero e caratteristico di questa regione. Salute! UVE Barbera d Asti in purezza ANNO 2015 MATURAZIONE Affinamento in acciaio ed in vetro. CARATTERISTICHE ORGANOLETTICHE Il rosso rubino luminoso ed intenso confermano la freschezza del vino. Intenso e persistente al naso, piacevolmente fruttato con accenni di fiori e frutta fresca. Secco, armonioso, fruttato è ben bilanciato in bocca. GRADAZIONE 13.5 ABBINAMENTO Si abbina bene con un ampia varietà di cibi che vanno dalla pasta alla carne. Perfetto con affettati e formaggi, è un vino brioso che invita alla convivialità.

4 COLLI DI LUNI VERMENTINO DOC ETICHETTA GRIGIA LUNAE ZONA DI PRODUZIONE Castelnuovo Magra e Ortonovo (La Spezia) UVE Vermentino in purezza ANNO 2016 MATURAZIONE In serbatoi d acciaio. CARATTERISTICHE ORGANOLETTICHE Di colore giallo paglierino con giovani riflessi verdolini. Profumo intenso, persistente, fine e di grande eleganza, con note di biancospino, pompelmo, mela renetta, pesca bianca e piacevole sottofondo di miele d acacia. In bocca si presenta fresco, equilibrato e giustamente sapido regalandoci evoluzioni gustative interessanti. GRADAZIONE 13 ABBINAMENTO Primi piatti con ripieni alla ligure, tortine di acciughe e totani ripieni. COLLI DI LUNI ROSSO DOC NICCOLO V LUNAE ZONA DI PRODUZIONE Castelnuovo Magra e Ortonovo (La Spezia) UVE Sangiovese, Merlot, Pollera Nera ANNO 2012 MATURAZIONE 12 mesi in barriques di rovere ed ulteriori 6 mesi di affinamento in bottiglia. CARATTERISTICHE ORGANOLETTICHE Dal colore rosso rubino con sfumature porpora, in bocca il profumo è intenso e complesso con sentori speziati di pepe nero, cannella e uno sfondo di terra bagnata e cuoio. Evidenti anche le note di frutti rossi maturi. In bocca è caldo, suadente, di grande personalità. La sua buona mineralita garantisce un finale piacevolmente asciutto. GRADAZIONE 13.5 ABBINAMENTO Ottimo con piatti importanti di carne quali bistecca alla fiorentina, cacciagione e formaggi stagionati.

5 FERRARI MAXIMUM BRUT TRENTODOC DENOMINAZIONE Trentodoc UVE Accurata selezione di sole uve Chardonnay, raccolte con vendemmia manuale nella prima metà di settembre. DURATA DELLA MATURAZIONE Oltre 36 mesi sui lieviti selezionati in proprie colture. Nel 1902 Giulio Ferrari intuí per primo la vocazione delle montagne del Trentino per la produzione di bollicine di grande eleganza. Da allora, Ferrari è il brindisi italiano per eccellenza, ambasciatore dell arte di vivere italiana nel mondo. ZONA DI PRODUZIONE Diversi comuni della Val d Adige, Val di Cembra e Valle dei Laghi, in vigneti alle pendici dei monti del Trentino, a metri, esposti a sud-est e sud-ovest. GRADAZIONE 12.5 NOTE DI DEGUSTAZIONE ESAME VISIVO Giallo paglierino intenso. ESAME OLFATTIVO Gentile, intenso e persistente, con una nota di frutta matura nella quale si riconoscono sentori di crosta di pane, nocciola e un variegato bouquet floreale. ESAME GUSTATIVO Morbido, elegante e armonioso. Ha notevole personalità, intense note fruttate tipiche dello Chardonnay cui si accostano fragranze di lievito. Caratteristica particolare: una minore pressione di anidride carbonica rispetto agli altri Trentodoc di Casa Ferrari.

6 LE NOSTRE BIRRE BIRRA MORETTI ALLA FRIULANA CON MELA RENETTA FRIULANA Birra Moretti alla friulana è una birra decisamente intrigante: il suo gusto insolito ma amabile deriva dalla presenza della mela renetta, uno dei prodotti tipici del Friuli. Piacevolmente beverina, grazie alla freschezza della mela, birra moretti alla friulana si distingue per il colore chiaro e paglierino e per il gusto particolarmente raffinato e leggermente aromatico. Da bere sola o in accompagnamento a salumi e formaggi della tradizione italiana. ABBINAMENTI CONSIGLIATI Salumi, formaggi. ZONA DI PRODUZIONE Gualdo Cattaneo (Perugia - Umbria) UVE Sagrantino in purezza ANNO 2007 SEMÈLE MONTEFALCO SAGRANTINO PASSITO DOCG - SIGNAE CESARINI SARTORI MATURAZIONE Affinamento per 24 mesi in piccole botti di rovere di Slavonia, poi 12 mesi in bottiglia. CARATTERISTICHE ORGANOLETTICHE Colore rubino molto intenso con riflessi violacei. All olfatto risulta particolarmente ricco e penetrante, moderatamente fruttato con sentore di frutta passita; le note balsamiche insieme a note speziate di pepe, vaniglia, caffè e bacche di cacao, rendono questo vino invitante. Al palato è molto ricco, caldo, con evidente presenza di tannini; piacevole il finale di lunghissima persistenza. GRADAZIONE 14.5 ABBINAMENTO Ottimo con formaggi stagionati, crostate e cioccolato. Assolutamente unico con l agnello. GRADAZIONE ALCOLICA 5.9% BIRRA MORETTI ALLA TOSCANA CON PREGIATO ORZO TOSCANO E FARRO Una birra chiara dal corpo rotondo e dagli aromi ben definiti. D altra parte contiene l orzo della Maremma, che le conferisce un colore miele intenso e un gusto completo, caratterizzato da una nota piacevole di amaro e di erbe aromatiche. Birra Moretti alla toscana è una birra che non teme confronti né compromessi, ed è ottima in accompagnamento a secondi di carne. ABBINAMENTI CONSIGLIATI Birra Moretti alla toscana è perfetta con i piatti dal sapore forte, a base di pepe e con aromi marcati. Primi piatti decisi, come la pasta e fagioli, la pasta alla carbonara, al cacio-pepe, all amatriciana, al ragù di selvaggina. GRADAZIONE ALCOLICA 5.5% BIRRA MORETTI ALLA SICILIANA CON FIORI DI ZAGARA SICILIANI Tutto il sole e il profumo degli agrumi di Sicilia lo abbiamo messo in questa birra dal gusto saporito, morbido, ricco di aromi intensi. L ingrediente segreto, infatti, è la zagara, il fiore degli agrumi tipico della Sicilia, la cui fioritura avviene principalmente a primavera. Piacevole se bevuta da sola, ma anche in abbinamento a piatti di pesce. Note: il Semèle 2007 che abbiamo selezionato per voi, è stato giudicato nel 2011 il miglior vino passito d Italia ed è stato premiato nel 2010 con la Medaglia d Oro al Concorso Mondiale dei Vini Dolci in Quebec. 14 Piemonte This month our wine is redolent of Piedmont. Wine has been produced in Piedmont from time immemorial and the whole world has been able to enjoy its innumerable variations. Although the production areas vary in location, the grapegrowing methods remain the same. The vineyards are almost all located on hillsides where farmers cultivate grapes which are suitable for aged red wines as well as for fragrant whites. The collection of Piedmont wines would not be complete without Nebbiolo, considered by many to be the most superior of Italian wine varieties. Then, there is the Barbera d Alba, Dolcetto, Barbaresco, le Langhe and Barolo which, along with Monferrato and Roero, figures on Unesco s world heritage list. Cheers! ORGANOLEPTIC CHARACTERISTICS Intense straw yellow color, the nose offers acacia flowers and magnolia, rennet apples, sweet almond, ripe citrus fruits and an elegant minerality. The palate is fruity, structured and soft. ALCOHOL CONTENT 13 SERVING SUGGESTIONS Great with shellfish and perfect with veal in tuna sauce.

15 Liguria This month our wine is redolent of Liguria. Liguria can lay claim to an outstanding wine-making tradition which dates back to Roman times, but during the Middle Ages there was a proliferation in the areas given over to grape growing. Even though it lies on the coast and is almost entirely made up of mountains and hills, Liguria has as many as 8 different zones which boast DOC status. These are mainly located in the areas of La Spezia, Cinque Terre, Sestri Levante and a good part of the Riviera di Ponente (Western Coast). BARBERA D ASTI DOCG VILLA M PRODUCTION AREA La Morra (Cuneo) Various DOC wines from Liguria have made a name for themselves across the globe, such as the red wine Riviera Ligure di Ponente Rossese and the white wines Colli di Luni Vermentino and Golfo del Tigullio, a distinctive light wine from the region. ORGANOLEPTIC CHARACTERISTICS Straw yellow with greenish highlights. At the nose is intense, persistent, fine and very elegant, with notes of hawthorn, grapefruit, rennet apple, white peach and pleasant acacia honey background. In the mouth the taste is balanced, fresh and sapid giving interesting evolutions. ALCOHOL CONTENT 13 SERVING SUGGESTIONS Great with stuffed Ligurian pasta, anchovies pies and stuffed squid. PRODUCTION AREA Castelnuovo Magra e Ortonovo (La Spezia) GRAPE VARIETY Sangiovese, Merlot, Pollera Nera YEAR 2012 COLLI DI LUNI ROSSO DOC NICCOLO V LUNAE MATURATION 12 months in oak barrels and 6 months in bottle. ORGANOLEPTIC CHARACTERISTICS Ruby red color with purple hues, in the mouth the aroma is intense and complex with black pepper and spicy cinnamon and a wet leather and earth background.
